Do you know the Xoler wine bar on the corner of Relox and Insurgentes in San Miguel de Allende? It has a unique atmosphere, with exposed, old stone walls that give an almost European feeling to the premises. The owner, Agustin Solorzano, has specialized in offering a wide range of original, very special wines. These enjoyable, natural, wines come from small wineries that achieve magic in the winemaking process.

Last weekend, on the occasion of the National Holidays, Xoler prepared a special evening of pairings. It teamed up with Cava Garambullo winery for a night of Mexican flavors, and natural wines proudly produced in San Miguel de Allende. Cava Garambullo is run by Natalia Lopez-Mota and Branko Pjanic, professional producers of a line of wines fit for celebrating the National Holidays.The tasting included sopes de cochinita paired with a Pinot Noir and an orange wine, the favorite of many; as well as a pambazo with a Syrah or a Grenache. Natural wines are increasingly in demand because of the original notes they offer. They are not perfect wines by nature, but they are spectacular! Long live wine!
